Preventive Maintenance Tips for Restaurant Refrigeration

Restaurant refrigeration works in tough conditions — heat, grease and constant door openings. A little regular care goes a long way toward preventing breakdowns during service.

Clean condenser coils regularly

Dirty condenser coils are the number one cause of warm reach-ins and prep tables. In most kitchens, check and clean them every one to three months.

Check door gaskets

Look for tears, cracks or gaps. A simple test: close the door on a dollar bill. If it slides out easily, the gasket may need replacing.

Keep airflow clear

Don't block evaporator fans with stacked product, and leave space around condensing units for air to move.

Watch your thermometers

Keep a thermometer in every unit and log temperatures daily. Small changes are an early warning sign.

Keep drains clear

Clogged drain lines lead to water on the floor and ice in the box. Have them checked during maintenance.

Schedule professional maintenance

We recommend a professional maintenance visit at least twice a year. A technician can check refrigerant levels, test defrost and controls, and catch worn parts before they fail.
